2 cups of granulated sugar
1 cup evaporated milk
1 tsp. vanilla
2 cups chopped pecans

Combine the first three ingredients in a saucepan and bring to a rolling boil, stirring constantly.  Let boil for 10 minutes continuing to stir.  Drop a very small amount of the mixture into a bowl of cold water to ensure it is at softball stage.  Remove from heat. Add pecans and continue to stir until the mixture has lost its gloss and becomes cloudy.  Spoon pralines out on wax paper but remove the pralines before they have cooled completely - later on they will be hard to remove them without breaking them.  Store in an airtight container with wax paper between layers.  For a different twist try using roasted pecans.

Makes 15 - 20 medium pralines.
